Gothic Remake scavenger you get from the side quest Beak Performance at NPC Cohsel west of the Old Camp. You gather Kingstide, deliver the saddle materials, and the next day you get the whistle. From then on you can call the mount anywhere on the open map. Below is the full step-by-step.
What you need to know before you start
Beak Performance can be finished right in chapter 1 — you need 5× Kingstide, 3× wolf skins, 2× leather strips and the Take Fur skill from Aidan. After you hand in the materials you have to sleep a day before Cohsel finishes the saddle.

Chapter 1 — the quest can be finished right after you enter the Valley of Mines, still before most of the main line.

Inventory: 5× Kingstide, then 3× wolf skins and 2× leather strips.

Take Fur skill from Aidan (1 LP + 250 ore). Without it you will not get skins from wolves. Or you can buy them from traders.

Extra ore: strips about 10 ore each at Fisk or Dexter in the Old Camp.

Time: after you hand in the materials you have to sleep a day, Cohsel finishes the saddle in the meantime.
Why do it right away
The scavenger mount shortens travel between the Swamp, the New Camp and the Old Camp, and original Gothic had nothing like this. It is not a hard quest, you find the materials early and the reward pays back very fast. Until the end of chapter three you run the map with no teleports and the mount cuts that a lot.
Where to find Cohsel
West of the Old Camp, on the road toward the New Camp. Leave through the Old Camp gate, stay on the path, pass Cavalorn’s hut and climb the slope. Above the road is Cohsel’s hut with a tamed wolf.
How to start the quest: Talk to Cohsel. He refuses at first — ask again whether he will teach you to tame a scavenger. After a few tries he agrees and gives you Beak Performance.

Step 1 — 5× Kingstide
Kingstide grows underwater in lakes and rivers. They are thin stems with purple flowers, hard to see from the bank and underwater. Collect 5 pieces and hand them to Cohsel. They are not by the shore, they sit in the deepest spots.

Always swim a bit off the bank, after a few meters they show up. Swim just above the bottom and look for purple flowers. When you play in English you will see the name Kingstide.

Hand the collected 5 pieces to Cohsel.
Step 2 — saddle: wolf skins and strips
Cohsel wants 3× wolf skins (Take Fur skill from Aidan) and 2× leather strips (~10 ore at Fisk or Dexter in the Old Camp). Bring everything and sleep until the next day. He needs time to make the saddle.

You find wolves on the paths between camps. Aidan has a hut between the exchange place and the Old Camp, a bit before the bridge. He can be missing from the hut and standing in the woods behind it.
Step 3 — whistle and riding
After you wake up go back to Cohsel, you get the whistle, the scavenger riding skill and 300 XP. Equip the whistle, blow it (sometimes twice or three times), and your scavenger runs in from some side. You cannot take him into camp and caves, unfortunately.

How to ride:

Equip the whistle and blow it — the scavenger runs in (sometimes I have to blow two or three times before he comes).

Stand by the saddle and press F — you mount.

Shift = sprint, faster run across the map.

In combat the mount runs off — blow again and call him back.

You will not ride into camps, caves and enclosed places — walk the short stretches on foot.

Common mistakes

Cohsel refuses the quest — you did not give up after the first “no”. Ask again about learning to ride a scavenger.

You cannot see Kingstide — do not swim only by the bank. Go farther into the water and a bit under the surface. The flowers are small and dark.

Wolves drop nothing — without the Take Fur skill from Aidan you will not skin them. The skill is worth it for later hunting too.

Cohsel gives nothing after the materials — you have to sleep and come back the next day. One sleep in camp is enough.
